Let's 1st understand what these planets represent on their own?

Sun - Sun represents Soul, Personality, King, Government, Father, Authority, Career, Top Positions, Ego, Self Esteem, Health, Education etc.

Jupiter - It is the most benefic planet and it represents all the auspicious things like Knowledge, Wisdom, Law, Guru, Spirituality, Religion, Philosophy, Literature, Elderly People and Children etc. For a girl, Jupiter also represents Husband.

House Ruler - Besides these karaka things, Sun & Jupiter will also rule some houses in your chart and will represent things related to that house. Of course we can't cover conjunctions Ascendant and house wise else it will never be over. So, you have to include those things at the time of interpreting this conjunction. Also, we need to keep in mind all Yogas and Raj-Yogas which their conjunction would be making to completely understand the conjunction. Here, we can only cover meaning as per karakas. 

Meaning of Sun-Jupiter Conjunction - This is another good conjunction to have as both are natural best friends. This conjunction shows someone who is highly knowledgeable and learned because knowledge of Jupiter is getting enhanced due to brightness of Sun. This also shows someone or his/her Father in Career related to knowledge, guidance and teaching/counselling. Sun is King and Jupiter is Counselor, so in ancient times, this conjunction would make someone a minister to the King and this is seen now also as someone who can work high in Govt to advise or counsel them. We can easily understand it as a Govt Advocate. As Sun is brightening the knowledge of Jupiter, Jupiter will also impact Sun. As Jupiter expands things, this conjunction can expand Career, Authority and Ego. It can also expand benefits from Father or Father can be a source of knowledge and wisdom. These good traits of Jupiter can be little damaged if it is too close to Sun, i.e. Combust. In that case, person will get these results with slight delay in life but he will get it. Person should be careful about not being too Egoist. As Jupiter also represents Biology, this conjunction can show someone in Medical field, either as practitioner or teacher. It also shows that person can be too egoistic about his belief system. It is almost a fundamentalist approach. Now, it can be serious trouble if person is not given right beliefs at the beginning of life. Something to take care of. Overall, this conjunction is all about gaining knowledge & wisdom and then spreading it to others. Only key is to keep the ego away. 

Who will win the Conjunction? - Sun & Jupiter both are strong and fiery planets. So, both will hold their ground. Now, it will depend on dignity of planets. If Sun is in better dignity, then Sun will rule over Jupiter, else vice-versa. If they both are in average dignity then dash of planet will decide which planet is active and then that planet will rule the conjunction. 

Dignity & Strength - 

This conjunction will work best in Aries, Cancer, Leo, Sagittarius and Pisces as Sun & Jupiter both will be in good dignity. 

Scorpio - Conjunction can work well but Scorpio will have highest say, lol. It means that there will be ups & downs and person will go through it. 

Taurus & Libra - Conjunction may lose its impact as Sun-Jupiter both are in enemy and debilitated sign (for Sun) respectively. 

Gemini & Virgo - Sun will have more authority as it is in neutral sign whereas Jupiter is in enemy sign. 

Capricorn & Aquarius - As these signs are ruled by Saturn, the good results of this conjunction will be seen in 30s.
